Full English Breakfast

Hi, this recipe is my own and serves one, but can easily be scaled up for more! I have previously made an Easy full english and a Vegan full english , if you want to have a look at those too.  This was much faster to make than I had anticipated and everything came together at the just right time, which is always a bit of a worry with having so many pans on the go at once (and things under the grill too!). You can change up how you cook the egg (I did scrambled) but some other options are poached, boiled, fried or even baked eggs (think Shakshuka-style).  Traditionally, you may also have fried bread, fried or grilled tomatoes and black pudding, so feel free to add those too. And, is usually served with a nice cup of tea. Enjoy! Wholemeal Scones

Regardless of if you're team 'scon' or 'scone', anyone can enjoy these wholemeal scones. They can be eaten sweet or savoury, depending on your preference. I made some mixed berry jam to go with them, so mine were mainly sweet! But cream cheese and chives or smoked salmon, cheese and marmite (added into the dough or on top...or both!), avocado and egg (poached or soft boiled for me), jam (and cream), nutella or marmalade are all good options to try and there are many more too!

In the scones, you can add extra spices, herbs and fillings to the actual dough too, if you like. However, once you have done this, they may not be sweet or savoury, but e.g. just sweet. 

I made these with wholemeal flour because we had some in the cupboard and we didn't have any plain flour left. This is a good example of making do with what you have, which saves time (from buying new ingredients at a shop) and money (ie another purchase). These scones would work with all kinds of flour, the only exception would be if you used all 'almond flour' which is just ground up almonds, so the result may not be very nice. But, all other flours should work fine, just bear in mind that liquid requirements may vary.

The same goes for most recipes, so instead of buying something new in, why not try and make a dish using what you have and maybe you'll create something fantastic!

Ingredients:

-200g Doves Farm Organic Fine Plain Wholemeal Flour {I used Allison's Wholemeal Flour, any wholemeal brand will be fine.}

-4 tsp Doves Farm Baking Powder {I used Dr Oeteker baking powder, any brand will do.} 

-1 tbsp brown sugar {I used 1 tbsp white sugar. Brown will give a more caramelly, nutty taste that will go better with the wholemeal flour, but the difference is minimal. Reduce or omit this if making savoury scones.} 

-50g butter {I used Clover margarine.}

-150ml milk {I only needed 75ml whole milk to bring it together.}

-flour, for dusting


Method:

1: Preheat the oven to 220˚C / Fan 200˚C / 425˚F / Gas 7. Dust a large baking tray with flour.

2: Measure the flour and baking powder into a bowl, stir to combine and sieve into a mixing bowl.

Stir in the brown sugar.

3: Chop the butter into the bowl and using a fork, blend everything together until the mixture resembles fine breadcrumbs. {Instead of a fork, I find rubbing in with my hands much easier and quicker.}

4: Stir in the milk {You should pour it in slowly as you can't take it away, but you can always add more! I found I only needed half the milk to bring my dough together.} then use your hands to bring together a soft mass of dough.

5: Lightly dust the work top with flour, place the dough in the middle and flatten it to 3cm/1” with your hands. Press a round pastry cutter or upturned coffee cup into the dough to cut out circles.

6: Lift the dough circles onto the prepared baking tray. 

7: Bake for 15-18 minutes until golden brown. {If you tap the base, they should sound hollow when they're ready.}
