Full English Breakfast

Hi, this recipe is my own and serves one, but can easily be scaled up for more! I have previously made an Easy full english and a Vegan full english , if you want to have a look at those too.  This was much faster to make than I had anticipated and everything came together at the just right time, which is always a bit of a worry with having so many pans on the go at once (and things under the grill too!). You can change up how you cook the egg (I did scrambled) but some other options are poached, boiled, fried or even baked eggs (think Shakshuka-style).  Traditionally, you may also have fried bread, fried or grilled tomatoes and black pudding, so feel free to add those too. And, is usually served with a nice cup of tea. Enjoy! Blackberry, Apple and Pineapple Crumble

This recipe is DELICIOUS and just amazing! I came across this recipe after cycling down the Busway. My sister spotted some blackberries so we obviously stopped to eat some. Then, mum started putting some into a tub so me and my sister also joined in. When we had finished, we had collected 100g of blackberries so I decided to bake something with them in.

This recipe is from the 'Cool Kids Cook' recipe book but I added in the pineapple as we didn't have enough other fruit and I thought pineapple would go well.

Also, there was leftover crumble topping so I added some raisins into the leftovers; put it on a baking tray and cooked it with the crumble just on the shelf underneath. Though, you do need to continuously check on it as the edges cook first. {Dads edit: If you're making these and have leftovers, don't use your Dad's raisins as he won't be very happy.}

Ingredients:
-14og Chilled Butter
-100g Brown sugar
-Pinch of salt
-200g Plain Flour
-Sprinkle of cinnamon
-100g Blackberries
-500g Apples
-300g Pineapple

Method:
1:Preheat the oven to 200℃/180℃ Fan oven/400℉/Gas 6.
2:Chop the cold butter into squares {I used Margarine and it was in a tub so I couldn't cut it into squares} and drop them into a large mixing bowl with the flour and salt.
3:Give everything a quick stir with your hands and then rub the pieces of butter into the flour using your fingertips.
4:Once the flour looks like breadcrumbs, with no big lumps of butter, you can stir in the sugar using a spoon.{Make sure to sift the sugar first as mine had lots of lumps in it}
5:Put the crumble mixture into the fridge while you prepare the filling.
6:Peel, core and cut the apples into chunks or rough slices.
7:Put the apples, pineapple and blackberries into your oven proof dish and sprinkle over a pinch of sugar and cinnamon. Tumble the fruit through your fingers to mix.
8:Spoon the chilled  crumble mix over the fruit and bake in the oven for 30mins until golden. {Mine took about 20mins}.



TIPS:
-You don't have to use cooking apples, I used normal ones
-You don't need fresh pineapple, I used tinned
-It doesn't matter if you don't have enough of one fruit just use some more of another
-Your pan should be 25cm/10inch square and 5cm/2inch deep. But mine was a rectangle that was 22cm long and 5.5cm deep.
