Full English Breakfast

Hi, this recipe is my own and serves one, but can easily be scaled up for more! I have previously made an Easy full english and a Vegan full english , if you want to have a look at those too.  This was much faster to make than I had anticipated and everything came together at the just right time, which is always a bit of a worry with having so many pans on the go at once (and things under the grill too!). You can change up how you cook the egg (I did scrambled) but some other options are poached, boiled, fried or even baked eggs (think Shakshuka-style).  Traditionally, you may also have fried bread, fried or grilled tomatoes and black pudding, so feel free to add those too. How To Cook: Runner Beans

Hi, this recipe is one I have written but was told to me by my Uncle's. During the holidays, my family and I visited them and we were offered some runner beans, which I took. After picking them with my Uncle D. from his garden, he then showed me how to prepare one and instructed me on the cooking. I took note of what he was saying, came home and wrote this. This weekend, I made a recipe with runner beans, and I made sure to cook some how my Uncle D & C both suggested and some how the other recipe I was following suggested. I think I preferred these, my sister did too. But, my Mum liked the other recipe better though, so it is personal. These beans are a beautiful bright green colour and taste really nice too, I hope you enjoy!

Serves: 2

Prep: 5-10mins

Cook: 25mins

Ingredients:

-1/2lb /225g Runner Beans {For 2 people as a side, increase quantities as required. If you have leftovers, they can be frozen for another time.}

-1tsp Sugar

-1tsp Salt

-Pinch Bicarbonate of soda {Not too much otherwise it will bubble over!}

Method:

1: Boil the kettle and wash the beans under the cold tap. Making sure to remove any dirt or leaves from them.

2: While the kettle's boiling, peel either side of the runner bean lightly, not going all the way through. You just want to take off the edges lightly.

3: Then, cut the beans diagonally into chunks, about 1cm long each.

4: Place the chopped beans in a saucepan and cover with the boiled water.

5: Bring back to the boil and add in the sugar and salt.

6: Once boiling, add in the bicarbonate of soda, not too much otherwise it will bubble over the top! And leave to cook. About 20-30mins in total, or until tender.

7: Once soft, drain and serve as a side.
