Full English Breakfast

Hi, this recipe is my own and serves one, but can easily be scaled up for more! I have previously made an Easy full english and a Vegan full english , if you want to have a look at those too.  This was much faster to make than I had anticipated and everything came together at the just right time, which is always a bit of a worry with having so many pans on the go at once (and things under the grill too!). You can change up how you cook the egg (I did scrambled) but some other options are poached, boiled, fried or even baked eggs (think Shakshuka-style).  Traditionally, you may also have fried bread, fried or grilled tomatoes and black pudding, so feel free to add those too. And, is usually served with a nice cup of tea. Enjoy! Barbecued Red Pepper and Ham Frittata

Hi, this recipe is actually my own and was created while me and my family were on holiday. We had some leftover barbequed peppers and boiled potatoes (from a salad) from our BBQ the night before and we were having tea together while my mum and sister went out for pizza, so we decided to use them up. The result was really tasty and super easy to do as well. Egg dishes are often simple and quick to make and can be made with literally any leftovers you may have in your fridge. After creating this, we were wondering what to call it, is it a Tortilla (Spanish Omelette) because of the potatoes? or is it a Frittata (as it had other things in it that aren't just potato and onion). Could it even just be an Omelette? were all questions we pondered. Once we'd done some research, we found this website, it states that a 'Frittata can contain any meat cheese and vegetables you happen to have to hand including potatoes and pasta. Everything except the eggs and cheese are heated through, the combined eggs and cheese is evenly poured over. The deep frittata is cooked on the hob before being finished under a hot grill to cook the top.'. Whereas, 'Tortillas are a deep omelette containing sliced potatoes and possibly a little onion. The eggs and potatoes are mixed together and cooked over a low heat then turned half way through the cooking time. Served hot or cold in slices or as bite sized tapas the tortilla makes a great picnic dish.' So, it was quickly clear that we had made a Frittata recipe, not Tortilla. Dietary Info:
-Unsuitable for Vegetarians {In place of ham, you can use a Quorn alternative, or another veggie meat, sliced veggie burgers and sausages would be nice, as well as crumbled falafels. Alternatively, add in some beans or pulses such as chickpeas, lentils or broad beans into the frittata. If doing so, make sure these are either from a tin or cooked first}
-Unsuitable for Vegans {See above for ham. In place of eggs, you can use a mung bean curd that should thicken under the grill and in the pan}
-Gluten - Free
-Dairy - Free
-No Nuts
-Main Meal

SERVES: 2 {If having with couscous or another carbohydrate e.g. rice, 2 slices of toast, bread etc... It would serve one, if having without a carbohydrate}

Ingredients:

-2 seedless red peppers, charred on the BBQ and diced {If you don't have a BBQ, or don't have the time, you can either, slice the peppers, drizzle with oil, and roast for 15-20mins in a hot oven [200℃/220℃ fan/390℉/Gas 6]. TIP: Leave the peppers in the warm oven after you have turned it off for extra juicy-ness and flavour, or in the fridge overnight. Or, you could fry them until they are soft on the day, they won't be charred, but they will be soft.}

-4 slices of smoked ham, sliced and diced {Any ham would be fine}

-1/4 red onion, diced {Or brown if you prefer}

-4 cherry tomatoes, sliced {About 1 big tomato}

-Leftover boiled potatoes, sliced {We used about 10 baby potatoes in ours}

-4 eggs, whisked

-Extra virgin olive oil {Any oil will work too}

-Salt and Pepper

to serve:

-couscous {35g dry per person}

-leafy green salad 

Method:
1: Prepare all the ingredients and preheat the grill to a high heat, roughly 
200℃/220℃
 fan/390℉/Gas 6. 

2: Then, over a medium heat, warm some oil in a frying pan, make sure the entire base of the pan in coated so that the frittata won't stick. Add in the potatoes and onions, frying for about 5mins, until the onions are soft. Be careful not to mash up the potatoes though.

3: Season, then add the tomatoes, pepper and ham to the pan. Fry until everything is heated through, another 5-7mins. 

4: Next, turn the heat down to low, and pour the egg into the pan. Step away from the hob, you have to let the frittata cook without interruption for a bit (5mins), no mixing, no stirring. You could start the salad or couscous now.

5: After it is starting to look a bit more solid, take the frying pan off of the hob and put under the grill. It should finish cooking here and turn brown too, add more seasoning if you wish. This will take 5-10mins.

6: Prepare any couscous and side salads, if you haven't already, while it is under the grill.

7: Halve and split between two plates, dish up couscous and salad and serve
