Full English Breakfast

Hi, this recipe is my own and serves one, but can easily be scaled up for more! I have previously made an Easy full english and a Vegan full english , if you want to have a look at those too.  This was much faster to make than I had anticipated and everything came together at the just right time, which is always a bit of a worry with having so many pans on the go at once (and things under the grill too!). You can change up how you cook the egg (I did scrambled) but some other options are poached, boiled, fried or even baked eggs (think Shakshuka-style).  Traditionally, you may also have fried bread, fried or grilled tomatoes and black pudding, so feel free to add those too. And, is usually served with a nice cup of tea. Enjoy! Muesli Muffins

This is a recipe that is in my Mum's Recipe book and I think that she found it in a magazine of some kind but I don't know exactly where so...sorry. But anyways, these muffins are so nice and full of flavour (they are also healthy). They were super easy to make and yeah. ENJOY!! TIP:If the top of the muffins cook quicker than the rest of the muffins take them out of the oven; cover with tin foil and then put bake in. This will stop the tops from burning but still cook the inside sufficiently.TIP 2: Don't over mix the muffins.

Dietary Info:
-Contains Nuts (Depending on what muesli you use; mine did)
-Contains Dairy
-Suitable for Vegetarians
-Contains Gluten



Ingredients:
-200g self raising flour
-1 tsp baking powder
-200g muesli
-1 tsp mixed spice
-250ml milk
-2 large eggs
-4 tbsp sunflower oil
-4 tbsp honey (I used golden syrup)
And a 12 hole muffin tray lined with muffin cases.

Method:
1:Set the oven to 200℃/Gas 6/390℉/180℃ Fan.
2:Sift the flour and baking powder into a bowl and stir in the muesli and mixed spice.
3:In a seperate bowl, lightly beat together the milk,eggs,oil and honey. Then stir into the dry mix.
4:Spoon the mixture into the muffin trays. Bake in the centre of the oven for 15-18mins, or until the muffins have risen and are a light golden colour and feel firm to the touch when lightly pressed in the centre.
5:Remove from the oven and transfer to a wire rack to cool. Serve warm or cold.
