Full English Breakfast

Hi, this recipe is my own and serves one, but can easily be scaled up for more! I have previously made an Easy full english and a Vegan full english , if you want to have a look at those too.  This was much faster to make than I had anticipated and everything came together at the just right time, which is always a bit of a worry with having so many pans on the go at once (and things under the grill too!). You can change up how you cook the egg (I did scrambled) but some other options are poached, boiled, fried or even baked eggs (think Shakshuka-style).  Traditionally, you may also have fried bread, fried or grilled tomatoes and black pudding, so feel free to add those too. And, is usually served with a nice cup of tea. Enjoy! Beef and Sweetcorn Pie With Tumeric,Spinach and Potato Fritters

This recipe, was part from my Mums cook book (1000 Recipe Cook book) and part from my Dads Newspaper/Magazine.I also served it with some green beans and roast potatoes. Enjoy!!

IMPORTANT:
The following recipes aren't necessarily used in that order but you have to read my recipe at the bottom where I might say something like 'now make the Pie' and then you would have to follow the recipe.

How to make roast potatoes:
Ingredients:
-A few sweet potatoes and a few normal potatoes
-Olive Oil

Method:
1:Peel and wash the potatoes.
2:Chop the potatoes into roast potato shapes
3:Get a roasting pan and cover with oil.
4:Add the cut potatoes and mix them in with the oil
5:Place in your oven for an hour {Sorry I can't remember what temperature it was}

How to make Spinach,Tumeric and Potato Fritters:
Prep:20min, Plus resting
Cook:10min
Makes:20

Ingredients:
-300g Sweet Potato, peeled and coarsely grated
-150g Baby Spinach, finely chopped {I don't think that the packet I used was exactly 150 but close enough not to matter}
-3tsp Tumeric
-1 tsp Chilli Flakes {I didn't use these as my sister doesn't like them}
-3 Large Eggs
-100g Plain Flour
-1 tsp Baking Powder
-Salt & Pepper
-Vegetable Oil, for frying
-Sweet Chilli sauce, to serve {I didn't us it as my sister doesn't like it. Although it wouldn't have mattered anyway as she didn't like the Fritters}

Method:
Put the sweet potato,spinach,turmeric,chilli flakes,eggs,flour and baking powder into a large bowl and mix well. Season generously, then leave the batter to rest for 15minutes.{This is where you will make the pie}Pour enough vegetable oil into a large,deep frying pan or saucepan to fill to a depth of about 5cm. Heat the oil over a medium-high heat and bring to a frying temperature (add a pinch of the batter: if it sizzles immediately, the oil is hot enough).Line a plate with a double layer of kitchen paper.When the oi is ready, stir the batter.Using two dessert spoons, form quenelles of the mixture: scoop up the mixture with one spoon and use the other to press down and shape it. {I ended up just using my hands to shape them}. Lower the quenelles into the hot oil and fry in batches, six at a time - it is important not to overcrowd the pan or the temperature of the oil will drop and the fritters will not be crisp. Fry the fritters for one minute, then turn them over and fry for another minute or so, or until nicely browned all over. Using a slotted spoon, {Or the tongs you were using to turn the over} transfer the  fritters from the oil onto the paper-lined plate to drain. Serve hot with sweet chilli sauce.

How to make Beef and Sweetcorn Pie:
Serves 4
Ingredients:
-45ml./3 tbsp oil
-2 onions, sliced
-1 red chilli,seeded and finely chopped {Once again, I didn't use it because of my sister}
-1 garlic clove, crushed
-675g./1+1/2 lb minced beef
-5ml/ 1 tsp cumin
-2.5ml/1/2 tsp cayenne
-pepper
-5ml/1tbsp flour
-125g/4oz sultanas, soaked in water for 10minutes and drained
Topping:
-30ml/2 tbsp oil
-1 onion, finely chopped
-1x350g/12oz can sweetcorn drained and pureed {I just defrosted frozen sweetcorn and used the blender to puree it}
-salt&pepper

Method:
Heat the oil in a frying pan. Add the onions, chilli and garlic and fry for 5 minutes. Add the beef and fry for 5 minutes or until it looses its pinkness. Stir in salt to taste,cumin,cayenne, flour and sultanas. Spoon into a shallow greased 1+1/4l / 2pint baking dish.
To make the topping, heat the oil in a frying pan. Add the onion and fry for 5mins. Add the sweetcorn and salt&pepper to taste and cook for 5 mins. Spoon over the meat. Put the dish into the oven, preheated to fairly hot (190℃/170℃ Fan/375℉/ Gas 5) and cook for 20minutes, or until the top is golden brown.

The actual recipe for the food:
Also, you will need to cook some green beans.

First, make the roast potatoes - as seen/read on the 1st recipe
Now, make the fritters up to where I have said 'Now make the pie'
After that, make the pie - as seen/read on the 3rd recipe
Once that's in the oven, put the green beans onto the hob.
Then, continue with the fritters recipe - the frying part.
Finally, serve up your dish after taking it out of the oven obviously
