Full English Breakfast

Hi, this recipe is my own and serves one, but can easily be scaled up for more! I have previously made an Easy full english and a Vegan full english , if you want to have a look at those too.  This was much faster to make than I had anticipated and everything came together at the just right time, which is always a bit of a worry with having so many pans on the go at once (and things under the grill too!). You can change up how you cook the egg (I did scrambled) but some other options are poached, boiled, fried or even baked eggs (think Shakshuka-style).  Traditionally, you may also have fried bread, fried or grilled tomatoes and black pudding, so feel free to add those too. And, is usually served with a nice cup of tea. Enjoy! Coconut Dream Smoothie

Hi, this recipe is from Annabel Karmel's 'Children's First Cookbook' page 42. This book has been really good for our family and we have made almost every single recipe in it!

I made this smoothie for my Dad because recently it's been really hot so he'd been fancying a refreshing pineapple drink and this was perfect. It is great for the summer months especially. However, my Dad's not too bothered about having it taste like coconut, so we just swapped the coconut out for plain whole cow's milk. You could swap the milk for whatever type of milk you like too: almond, semi-skimmed, even strawberry milk. We also used tinned pineapple over fresh as it we didn't want a whole pineapple as we already have enough fruit at home and the tinned version comes pre-cut - bonus!

Also, this recipe can be used as a basic outline for other smoothies, just swapping the fruit and juice around for different variations as well as the ice-cream flavour, which could alternatively be substituted for yogurt (any flavour, frozen or not frozen works fine) too. So, smoothies are really good at adapting to whatever's in the fridge or fruit bowl.

Makes: 2 glasses

Takes: 10mins 


Ingredients:

-125ml coconut milk {Any milk will be fine, unless you want a coconutty flavour. We used whole milk (cow's) as we weren't too fussed about having coconut. My dad mainly wanted a pineapple flavour.}

-300ml pineapple juice

-100g pineapple, cut into chunks

-2 scoops vanilla ice-cream


Method:

1: Put the coconut milk, pineapple juice, ice cream and pineapple (except 2 bits) into a blender and whizz.

2: Pour the drink into glasses and serve with the reserved pineapple on the side of the glass.
