Full English Breakfast

Hi, this recipe is my own and serves one, but can easily be scaled up for more! I have previously made an Easy full english and a Vegan full english , if you want to have a look at those too.  This was much faster to make than I had anticipated and everything came together at the just right time, which is always a bit of a worry with having so many pans on the go at once (and things under the grill too!). You can change up how you cook the egg (I did scrambled) but some other options are poached, boiled, fried or even baked eggs (think Shakshuka-style).  Traditionally, you may also have fried bread, fried or grilled tomatoes and black pudding, so feel free to add those too. And, is usually served with a nice cup of tea. Enjoy! Lime Chicken Stirfry

Hi, this recipe is from a Sainsbury's 'Try something new today' card and in the 'Feed your family for a fiver' section as well. However, this card is from 2008 and the prices may have changed since then making this meal potentially over a fiver. I loved this stir fry because it wasn't dry; sometimes I manage to make the noodles really dry when frying them at the end but with this one, as we had added stock, the noodles stayed nice and moist making the dish all the more enjoyable. If you have younger children, you may want to leave out the beansprouts as my younger sister didn't like them because of their flavour, alternatively you could switch up the veg in the stirfry, I added a carrot in mine, some ideas: sugar snap peas, broccoli, sweetcorn, peppers or whatever you have in at the moment try it out! Enjoy!!

Why not cook this dish as part of Chinese New Year celebrations? {This is due to the date of publishing on the card, you can enjoy stir fry's all year round}

Ingredients:
-300g pack basics chicken breast pieces {I chopped up 2 large chicken breasts}
-385g pack just stir fry free-range fresh egg noodles {I used 4 noodle nests, 1pp}
-1 loose onion
-3 loose limes
-400g pack just stir fry beansprouts {I used a Tesco 300g pack}
-1tbsp olive oil {I used extra virgin but any would work}
-200ml vegetable stock made with 1 stock cube
-1tsp sugar
-2tsp soy sauce {I used dark soy sauce}

Method:
1:
Heat 1tbsp olive oil in a pan, then add 1 onion, peeled and roughly chopped,  and fry until soft. {I added a pinch of salt here} Add the chicken breast pieces and cook for a further 5mins until browned. Remove chicken and set aside. {I also removed the onions as it was too hard to separate them at this point, I just popped them, the chicken and onions, in a large mixing bowl near the hob, ready for later}
2: Add 200ml vegetable stock, made with 1 vegetable stock cube, the juice of 1 lime and 1tsp sugar, and heat until half the stock has been absorbed. 
3: Return the chicken to the pan and simmer for a further 2mins until the chicken is piping hot throughout. Add the beansprouts and the egg noodles and heat through. Add 2tsp soy sauce and mix. {This is where I added a carrot}
4: Stir through the zest and juice of another lime and garnish the noodles with lime wedges to serve.
