Full English Breakfast

Hi, this recipe is my own and serves one, but can easily be scaled up for more! I have previously made an Easy full english and a Vegan full english , if you want to have a look at those too.  This was much faster to make than I had anticipated and everything came together at the just right time, which is always a bit of a worry with having so many pans on the go at once (and things under the grill too!). You can change up how you cook the egg (I did scrambled) but some other options are poached, boiled, fried or even baked eggs (think Shakshuka-style).  Traditionally, you may also have fried bread, fried or grilled tomatoes and black pudding, so feel free to add those too. And, is usually served with a nice cup of tea. Enjoy! Stuffed Peppers

Hi, this recipe was inspired by Joe Wick's recipe in his 'Lean in 15' cookbook, on page 174. I am not including the original recipe as this was my take on it as I didn't have majority of the ingredients and I was just making it up as I went along. I hope you enjoy and are also inspired to give stuffed peppers a go!

Dietary Info:
-Dairy Free
-Nut Free
-Contains Gluten {Use a different carbohydrate, as bulgur has gluten}
-Unsuitable for Vegetarians
-Unsuitable for Vegans {Use a meat substitute like Quorn, tofu or another plant based protein}


Ingredients:
-30g dry bulgur wheat {We'll soak it later. You could always use another grain e.g cous-cous, rice or even pulses like lentils or chickpeas}
-1 pepper, any colour {I used yellow}
-2 cherry tomatoes, diced or cut to your taste
-2 olives, chopped
-2 slices of sandwich ham {You can use whatever meat you have available some good ones are: salami, chicken, beef, tuna, salmon ect}
To serve:
-A handful of spinach {or your favourite leafy greens}
-2 medium radishes, chopped
-Any leftover filling you have

Method:
1: Soak your bulgur wheat. First, rinse off the starch, a good indication of when it has all gone if if the water you are rinsing it in is clear. Then, put in a bowl and cover with boiling water. Leave to soak for 1hr or 2. Before draining through a sieve before use. {If using another filling prep according to packet instructions}
2: Now, chop up all your veg and thinly slice the ham.
3: Cut the top off of your pepper, see picture, or cut the pepper in half and you can fill each side separately. Also, deseed the pepper.
4: In a small bowl, mix together the bulgur, tomatoes, meat and olives, until well combined.
5: Next, stuff your pepper and place it on a baking tray. Bake in a preheated oven at 240℃/220℃ fan/465℉/Gas 8 for 10mins, or until the sides start to char and the pepper is soft.
6: While it's cooking, place spinach, radish and any leftover filling on a plate as a side salad.
7: When ready, plate up and Enjoy!
